I home make my chicken soup. I stopped using premade chicken broth about a year or two ago because of the ingredients and it just didn't feel as healthy as it used to, to use premade; and started letting the chicken itself "create" its own broth by literally just letting the chicken cook in water. I also learned to trust this technique through my mother-in-law.

Ingredients I typically use:
chicken breast
water
cut up carrot
chopped onion (and the onion gets me EVERYTIME in tears - one way to clear out your senses for sure!)
The only ingredients I typically forget for SOME ODD reason, is celery, rice or pasta, and maybe a little bit of pepper. BUT as much as it can all be made tastier with these forgotten ingredients, it still turns out great just being its simple self chicken soup. Its gluten free, soy free, sugar free, dairy free, and still healthy and so good! I don't even use measurements per say. I decide how much will work in eyeballing along with my thinking cap (brain), and toss it together and just HOPE it turns out for my family of four.
