This recipe came out random. So my oven doesn't work - if I haven't mentioned this in my other recipe posts - and I am stuck with many same meals and trying to think of something new. I don't follow recipes either. But, one day I was thinking what to cook out of what I have, and originally, I was going to cook diced sweet potatoes to be a side dish kind of deal and the beef, which was ground beef, was supposed to go for a pasta I had in mind. But the plan changed.

So I decided to still dice the sweet potatoes and season them as I usually do with sea salt, black pepper and olive oil. I cooked the sweet potatoes AND ground beef in their own pans and then once both cooked, I mixed both foods into one pan. Once all cooked, I grabbed a spring mix handful of lettuce and set it in a bowl, and then put a spatula full of the sweet potato and green beef on top. The topping of potato and beef is still hot, so it might give too much warmth to the lettuce, but still tastes great! It was a healthy hit with my family!


Ingredients Used:

Sweet Potatoes - diced, seasoned with sea salt, black pepper and olive oil. (I used three sweet potatoes).

Ground beef - I just cooked as is, didn't add any oil or seasoning.

Lettuce - spring mix.

Ingredients: broccoli, white rice, chicken, ghee butter (sometimes avocado/olive oil).


I typically take:

1 or 2 packets of chicken breast (slice/fillet it and cut it)

2 or 3 heads of broccoli and cut it to typical pieces

and 1 or 2 cups of white rice.



What I did and used...

I used the basmati white rice. So I get the rice cooking first. Once I have got the rice fully cooking for the 15 minutes;

I start the broccoli...letting it cook for about 15 minutes (basically cooking the rice and broccoli in the same time frame);

Then I get the chicken cooking. Once the chicken looks cooked, I add some butter or oil (mostly oil these days) and mix it up.

At this point, the broccoli should be steamed and ready, so I will add the broccoli to the chicken pan next, and mix it together, letting the oil grab on to the broccoli.

Next and finally, I add the rice.


This meal should take about 30-45 to prep and cook I think. I haven't really ever kept track of that part, but it goes quickly and tastes great! Keep in mind, you can make it different and see how it turns out!

I home make my chicken soup. I stopped using premade chicken broth about a year or two ago because of the ingredients and it just didn't feel as healthy as it used to, to use premade; and started letting the chicken itself "create" its own broth by literally just letting the chicken cook in water. I also learned to trust this technique through my mother-in-law.

Ingredients I typically use:

chicken breast

water

cut up carrot

chopped onion (and the onion gets me EVERYTIME in tears - one way to clear out your senses for sure!)

The only ingredients I typically forget for SOME ODD reason, is celery, rice or pasta, and maybe a little bit of pepper. BUT as much as it can all be made tastier with these forgotten ingredients, it still turns out great just being its simple self chicken soup. Its gluten free, soy free, sugar free, dairy free, and still healthy and so good! I don't even use measurements per say. I decide how much will work in eyeballing along with my thinking cap (brain), and toss it together and just HOPE it turns out for my family of four.
